Chocolate Coconut Cheesecake Bars
- 1 c. all purpose flour
- 1/4 c. white sugar
- 1/2 c. butter
- 1/2 c. angel flake coconut
- 1 8 oz. pkg. cream cheese softened
- 3 squares semi sweet chocolate melted
- 2 eggs
- 2/3 c. white sugar
- 2 Tbsp. all purpose flour
- 2/3 c. light cream
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- Combine first two ingredients, cut in butter until mixture is crumbly.
- Stir in coconut, press mixture firmly in greased 8 inch square pan.
- Cream together cheese, melted chocolate, eggs, sugar and flour with electric mixer.
- Gradually add cream, vanilla and cinnamon mixing until smooth.
- Pour over crust.
- Bake at 350u0b0 for 25 to 35 minutes, or just until filling is set.
- Cool, then refrigerate.
- Cut into bars before serving.
