Creamed Mushroom Chicken With Biscuits
- 1 (3 lb.) frying chicken, boiled
- 1/4 c. shortening (Crisco)
- 1/4 c. flour
- 1 tsp. salt
- pinch of pepper
- 1 can cream of mushroom soup
- 1 c. rich milk
- 3 c. well-seasoned chicken broth
- 1 pkg. (can) oven-ready biscuits
- Cook chicken in salt water until done.
- Let cool.
- Pick chicken from bones.
- Make a rich gravy with shortening, flour, salt (if needed), pepper, cream of mushroom soup, milk and broth. Cook until boiling, stirring often.
- When it boils, stir in chicken pieces; bring to a boil.
- Pour chicken mixture in an 11 x 14-inch baking dish.
- Place in 350u0b0 to 400u0b0 oven until a scum forms on the top.
- Place biscuits on top and bake until biscuits are done.
- Serve with salad and a vegetable.
