Super Beef And Squash Casserole

  1. Cook squash and onion in salt water about 5 minutes.
  2. Drain well; set aside.
  3. Cook green pepper and ground beef until meat is no longer pink.
  4. Stir in rice.
  5. Blend eggs, soup, sour cream and seasoning and stir into meat mixture.
  6. Fold in squash mixture and turn into a greased, shallow 2-quart baking dish.
  7. Top with cheese.
  8. Sprinkle with paprika, if desired.
  9. Bake at 350u0b0 for 20 minutes or until hot and bubbly.
  10. Makes 6 servings.
