Super Beef And Squash Casserole
- 1 lb. fresh yellow squash or zucchini squash, sliced
- 1 c. chopped onions
- 1 c. green pepper
- 1 lb. lean ground beef
- 3 c. cooked rice
- 2 eggs, beaten
- 1 (10 3/4 oz.) can condensed cream of chicken soup
- 1/2 c. sour cream
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. grated Cheddar cheese
- Cook squash and onion in salt water about 5 minutes.
- Drain well; set aside.
- Cook green pepper and ground beef until meat is no longer pink.
- Stir in rice.
- Blend eggs, soup, sour cream and seasoning and stir into meat mixture.
- Fold in squash mixture and turn into a greased, shallow 2-quart baking dish.
- Top with cheese.
- Sprinkle with paprika, if desired.
- Bake at 350u0b0 for 20 minutes or until hot and bubbly.
- Makes 6 servings.
