Bow Tie Italian Casserole
- 6 to 8 oz. bow tie pasta
- 1 lb. ground beef
- 1 (15 oz.) can pizza sauce
- 1 small can mushrooms, drained
- 1/2 (8 oz.) pkg. sliced pepperoni (optional)
- 1/2 tsp. Italian seasoning (can use oregano or basil)
- 1 tsp. minced dry onion
- 1 egg, beaten
- 1 c. cottage cheese
- 1/4 c. grated Parmesan cheese
- 1 c. shredded Mozzarella cheese
- 1 c. Monterey Jack cheese, shredded
- 1/2 c. shredded cheese (Cheddar cheese, set aside for top layer)
- Cook bow tie pasta; drain and set aside.
- Cook ground beef; drain off fat.
- To ground beef, add Italian seasoning, pizza sauce, onion and mushrooms.
- In another bowl, add egg and cottage cheese.
- In a 12 x 9-inch baking pan, layer 1/2 of the pasta, spoon 1/2 of cottage cheese mixture.
- Sprinkle with 1/2 of Parmesan cheese.
- Layer pepperoni slices (optional).
- Place 1/2 of meat mixture.
- Next, add 1/2 of Mozzarella and 1/2 of Monterey Jack cheese.
- Repeat pasta, cottage cheese, Parmesan cheese, pepperoni and meat mixture.
- Top with remainder of Mozzarella and Monterey Jack.
- Finish top with 1/2 cup shredded Cheddar cheese. Bake, covered, at 425u0b0 for 15 minutes; uncover and bake 8 to 10 minutes until cheese is melted and casserole is heated through. Serve with favorite salad and hot bread.
