Mama Crow'S Raisin Nut Jam Cake
- 1 c. softened butter or margarine
- 2 c. sugar
- 4 large eggs
- 1 1/2 c. jam (blackberry is recommended)
- 3 c. all-purpose flour
- 2 tsp. ground allspice
- 2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. buttermilk
- 1 c. dark raisins
- 2/3 c. chopped nuts (prefer pecans)
- In large mixing bowl, beat butter and sugar until light and fluffy.
- Beat in eggs well, then add jam.
- Add sifted dry ingredients alternately with buttermilk, beginning and ending with dry ingredients and beat well after each addition.
- Stir in raisins and nuts.
- Pour into 3 greased and floured 9-inch cake pans.
- Bake 40 minutes at 300u0b0 (or until toothpick inserted in center of layer comes out clean).
- Cool completely on racks.
