Beef And Pea Pod Stir-Fry
- 3/4 lb. boneless beef top round steak
- 3 Tbsp. soy sauce or reduced-sodium soy sauce
- 2 Tbsp. red wine vinegar
- 1 clove garlic, minced
- 1/4 tsp. crushed red pepper
- 3 green onions, bias sliced into 1/2-inch lengths
- 2 Tbsp. cold water
- 4 tsp. cornstarch
- 6 oz. pkg. frozen pea pods
- 8 cherry tomatoes, quartered
- 1/2 c. fresh bean sprouts
- Partially freeze beef.
- Thinly slice meat across the grain into bite size strips.
- In a 1 1/2-quart microwave-safe casserole, cook meat strips, covered, on 100% power (High) for 4 to 6 minutes or until meat is brown, stirring every 2 minutes.
- Use a slotted spoon to remove meat from the dish, reserving juices.
- Set meat aside.
