Hot Pepper Relish(Serves 1)

  1. Sprinkle salt over tomatoes and peppers.
  2. Allow to stand overnight.
  3. Drain thoroughly.
  4. Add 1 quart vinegar and 2 quarts of water.
  5. Boil vegetables 15 minutes; drain.
  6. Combine 2 quarts vinegar and 4 cups sugar.
  7. Cook until sugar is dissolved.
  8. Add mustard seed.
  9. Tie cloves, cinnamon, allspice and ginger root loosely in a cheesecloth bag.
  10. Add to syrup.
  11. Add vegetables and simmer 2 hours, stirring occasionally.
  12. Ladle into hot, sterilized jars and seal.
