Potato Curry
- 2 1/4 c. potato
- 1 c. tomato
- 1 tsp. garlic paste
- 1/2 tsp. turmeric
- 1 tsp. coriander leaves
- 1/2 c. oil
- 3 medium onions
- 1 tsp. ginger paste
- 1 tsp. coriander powder
- 1 tsp. chili powder
- 2 tsp. spiced salt to taste
- Fry chopped onion until light brown and add ginger paste, garlic paste, red chili powder and turmeric and fry for a few minutes.
- Add one cup of water and salt and stir for a minute until onion becomes tender.
- Add chopped tomatoes and cook until a thin gravy is formed.
- Add potatoes (peeled and cut into big pieces) and fry for 10 minutes.
- Add coriander powder.
- Add 3 cups more water and cook on a low fire until tender.
- Remove from the fire and sprinkle chopped coriander leaves and serve hot along with puri. Serves 8.
