Aunt Jan'S Twice Baked Potatoes
- 5 large baking potatoes
- 8 strips cooked bacon
- 1/2 c. chopped green onion
- 1 1/2 c. sour cream
- 5 Tbsp. grated Parmesan cheese
- 1 1/2 tsp. salt
- 1 1/2 tsp. pepper
- 10 pats butter
- parsley
- paprika
- Bake potatoes (oil skins) at 400u0b0 for 55 minutes.
- Cut potatoes lengthwise in half.
- Hollow out potatoes in large bowl and mash thoroughly.
- In large skillet, heat 3 to 4 tablespoons bacon drippings.
- Add onions and saute.
- Add crumbled bacon, potatoes, sour cream, 1/2 of the cheese, salt and pepper.
- Blend well.
- Add mixture to skins, place pats of butter on top and sprinkle with parsley and paprika.
- Place in skins in baking dish (9 x 12-inch).
- Bake uncovered at 350u0b0 for 12 to 20 minutes.
