Ginger Carrot Soup - Gluten Free, Dairy Free

  1. In a stock pot, saute the onions in the olive oil until translucent.
  2. Add the ginger, mix.
  3. Add carrots, saute 3 minutes.
  4. Add sweet potato, saute 3 minutes.
  5. Add rice, mix together.
  6. Add chicken stock and remaining ingredients and let simmer 25 minutes.
  7. Puree mixture and return to stock pot.
