Spicy Strawberry Spinach Salad

• Salad
• 4 cups spinach, washed and drained
• 2 fresh green shallots, chopped
• 1 cup blood orange
• 1 cup strawberry, sliced
• 1/2 cup pecans
• Dressing
• 1/2 cup honey
• 1/4 cup oil
• 1/2 cup orange juice concentrate, thawed
• 1/4 cup white wine vinegar
• 1 fresh cayenne pepper, chopped
• salt & pepper (optional)
• Topping
• smoked gouda cheese, cut into small cubes

1. To prepare dressing; combine oil, honey, orange juice concentrate and white
2. wine together - whisk until smooth, then add peppers. Let set 15 minutes.
3. Put all salad ingredients in salad bowl and toss with dressing.
4. Serve topped with cheese cubes.
