Enchanted Broccoli Forest
- 1 lb. bunch fresh broccoli
- 2 c. raw brown rice
- 3 c. water
- 1 Tbsp. butter
- 1 c. chopped onion
- 1 large clove crushed garlic
- 1/2 tsp. salt
- 1/2 tsp. dill weed
- black pepper to taste
- 1/4 tsp. dried mint
- cayenne pepper to taste
- 3 large eggs
- 1/4 c. fresh minced parsley
- 1 1/2 packed cups grated cheddar or swiss cheese
- lemon butter
- To make trees - cut off stalks of broccoli and cut into spears. Combine rice and water.
- Bring to a boil.
- Lower heat and cover. Cook until done (20 - 30 min.).
- Fluff with a fork.
- Meanwhile - saute' butter, onion, garlic, salt, dill weed, pepper, mint, & cayenne pepper.
- Add to cooked rice - mix well.
- Beat together eggs, parsley, cheese - mix into rice mixture.
- Spread into buttered 10 x 6-inch pan.
- Steam broccoli until tender.
- Rinse in cold water, drain.
- Arrange broccoli upright in bed of rice mixture and drizzle trees with lemon butter.
- Bake 30 min. at 325u0b0.
