Crab Casserole
- 4 1/2 c. soft bread crumbs
- 4 hard-cooked eggs, cubed
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 lb. small shrimp
- 1 can crab meat
- 1 (4 oz.) can mushrooms, drained
- paprika
- 1 1/2 tsp. onion salt
- 1/2 can pimento, diced
- 2 tsp. dried parsley
- 1 can cream of chicken soup
- 1 c. half and half
- 1/2 c. mayonnaise
- large lump butter, melted
- Combine 4 cups bread crumbs, eggs, salt, pepper, shrimp, crab, mushrooms, pimento, onion salt and parsley.
- Mix lightly; pour into large buttered baking dish.
- Mix soup, cream and mayonnaise, blending well.
- Pour over fish mixture.
- Mix 1/2 cup bread crumbs and butter; sprinkle over casserole.
- Sprinkle with paprika.
- Bake for 30 minutes at 325u0b0.
- Serves 10.
