Black Bottom Cupcakes
- 1 (8 oz.) pkg. cream cheese, softened
- 1 egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 1 (6 oz.) pkg. semi-sweet chocolate tidbits
- 1 1/2 c. flour
- 1 c. sugar
- 1/4 c. cocoa
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. water
- 1/3 c. oil
- 1 Tbsp. vinegar
- 1 tsp. vanilla
- granulated sugar
- Mix together cream cheese, egg, 1/3 cup sugar and 1/8 teaspoon salt; beat well.
- Stir in chocolate tidbits; set aside.
- Sift flour, 1/2 cup sugar, cocoa, soda and 1/2 teaspoon salt into mixing bowl.
- Add water, oil, vinegar and vanilla; beat well. Fill baking cups 1/3 full of chocolate batter.
- Top each with a heaping teaspoonful of cream cheese mixture.
- Sprinkle with granulated sugar.
- Bake at 350u0b0 for 25 to 30 minutes.
