Mom'S Chili Con Carne
- 1 lb. lean ground beef, chuck or venison
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 1 (16 oz.) can red kidney beans
- 1 (16 oz.) can hot chili beans
- 2 large cans whole tomatoes
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. garlic powder
- 2 1/2 Tbsp. chili powder
- 1/8 to 1/4 tsp. Tabasco pepper sauce
- dash of cayenne (if desired)
- 2 Tbsp. cornstarch
- 1/4 c. water
- Brown ground meat and drain off grease.
- Lightly saute onion and pepper.
- Put meat, onion, pepper and all other ingredients (except cornstarch and water) into large Dutch oven type pan. Cover and cook over medium to low heat, stirring occasionally, for about 1 hour.
- If mixture is too soupy, mix cornstarch and water in a small bowl and add to chili mixture.
- Continue cooking a few minutes, stirring to let cornstarch thicken the mixture.
- Serve steaming hot.
