Mexican Quiche
- 1 (9-inch) unbaked pie crust
- 1/2 lb. ground pork sausage
- 1/2 c. sliced green onion
- 2 cloves minced garlic
- 1 (4 oz.) can diced green chili peppers, drained
- 2 c. shredded American cheese
- 2 Tbsp. flour
- 1 c. milk
- 1/2 tsp. Tabasco sauce
- 4 eggs, beaten
- Bake unpicked pastry with 2 layers of foil for 5 minutes at 450u0b0.
- Remove foil; bake 5 to 7 minutes more (keep warm).
- Cook sausage, onions and garlic until meat is done.
- Drain.
- Stir in chili peppers.
- In another saucepan, combine cheese and flour; add cream.
- Cook and stir until cheese is melted.
- Add hot sauce. Blend hot cream mixture into beaten eggs slowly.
- Add meat mixture.
- Pour into pastry.
- Bake at 325u0b0 for 20 to 25 minutes or until a knife comes out clean.
- Let stand.
- Serve with picante sauce, sour cream and guacamole.
