Microwave Chili
- 1 lb. lean ground beef
- 1 medium onion, chopped
- 1 medium green pepper, diced
- 1 (6 oz.) can tomato paste
- 1 (16 oz.) can chili style or cut up whole tomatoes
- 1 (15 1/2 oz.) can red kidney beans (undrained)
- 1 can black beans, drained
- 1/4 c. water
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 2 to 3 tsp. chili powder
- diced jalapeno peppers (to taste)
- Crumble ground beef in two-quart casserole.
- Add the onion and green pepper.
- Cover with glass lid.
- Microwave on High for 5 minutes; stir and microwave on High for another 4 minutes or until meat is browned.
- Drain and stir in the remaining ingredients. Re-cover casserole dish.
- Microwave on Medium-high for 22 minutes. Let stand covered for 5 minutes.
- Before serving, sprinkle with shredded Cheddar cheese.
