Peaches And Cream Salad
- 1 (3 oz.) pkg. peach Jello
- 1 c. boiling water
- 3/4 c. cold water
- 3 c. peaches, sliced
- 1 small banana, sliced
- 1 env. unflavored gelatin
- 3 Tbsp. cold water
- 1/2 c. half-and-half cream
- 1 (8 oz.) pkg. cream cheese, softened
- 1 c. whipping cream
- 1/2 c. plus 2 Tbsp. sugar
- 1 c. peaches, pureed
- Dissolve peach gelatin in boiling water; stir until dissolved. Add 3/4 cup cold water and mix well.
- Chill until the consistency of an unbeaten egg white.
- Stir in sliced peaches and banana. Pour into a lightly oiled 8-cup mold.
- Chill until set.
- Soften gelatin in 3 tablespoons cold water.
- Scald half-and-half cream and stir into gelatin mixture.
- Beat cream cheese until smooth. Add whipping cream, sugar, and pureed peaches; mix well.
- Add to gelatin mixture and stir well.
- Pour over peach and banana layer. Chill at least 8 hours, or until firm.
- Yield:
- 10-12 servings.
