Pizza Rushca(Two Crust Italian Pie)
- double crust pie pastry
- 5 eggs
- 1 lb. Ricotta cheese
- 2 Tbsp. chopped onion
- 1 pkg. grated Parmesan cheese
- 1 Tbsp. chopped parsley
- 1/4 tsp. salt
- 1/4 tsp. fresh ground pepper
- 2 Tbsp. olive oil
- 2 cloves garlic
- 20 oz. tomato puree
- 4 oz. tomato paste
- 1/4 tsp. marjoram
- 1/2 tsp. oregano
- 2/3 c. large black olives, sliced
- 1 lb. thinly sliced Mozzarella cheese
- 1 large bell pepper, seeded and matchstick sliced
- 1 lb. mushrooms, sliced
- Prepare pie pastry per your recipe.
- Line a large deep dish pie plate (I use a paella pan) and roll out a top crust.
- Beat the eggs; stir in Ricotta cheese, onion, parsley, Parmesan cheese and season liberally with salt and pepper.
- Set aside.
