Pizza Rushca(Two Crust Italian Pie)

  1. Prepare pie pastry per your recipe.
  2. Line a large deep dish pie plate (I use a paella pan) and roll out a top crust.
  3. Beat the eggs; stir in Ricotta cheese, onion, parsley, Parmesan cheese and season liberally with salt and pepper.
  4. Set aside.
