Zucchini Bread

  1. Beat eggs.
  2. Add oil or applesauce, sugar and vanilla.
  3. Beat until foamy.
  4. Stir in zucchini; add crushed pineapple.
  5. Combine remaining ingredients.
  6. Stir gently until blended.
  7. Divide into 2 greased and floured 5 x 9-inch bread pans sprayed with Pam.
  8. Bake at 350u0b0 for 1 hour (or until brown on edges).
  9. Using the substitute eggs and applesauce causes it to get done in about 50 minutes. Cool 10 minutes and turn onto wire rack to cool completely.
