Apple And Cheddar Gratin
- 2 lb. Granny Smith apples, peeled and cut into 1/4-inch slices
- 1/2 c. raisins
- 1/2 tsp. cinnamon
- 1/4 ??? fresh lemon juice
- 3/4 c. firmly packed dark brown sugar
- 1/2 c. all-purpose flour
- 1/8 tsp. salt
- 1/2 stick cold unsalted butter, cut in bits
- 1 c. finely grated extra sharp Cheddar
- In a well-buttered 1-quart shallow baking dish, arrange the apple slices and sprinkle them with the raisins, the cinnamon and the lemon juice.
- In a small bowl, combine the sugar, the flour and the salt.
- Blend in the butter until the mixture resembles coarse meal (I use the food processor for this) and toss the mixture with the Cheddar.
- Sprinkle the Cheddar mixture over the apple mixture and bake the gratin in the upper third of a preheated 350u0b0 oven for 30 minutes or until the apples are tender. Serve the gratin as a dessert or as an accompaniment to roast pork or ham.
- Serves 4 to 6.
