Mixed Veggies And Cheese Dish
- 3 Tbsp. salad oil
- 1 clove mashed garlic
- 1 small chopped onion
- 1 medium chopped green pepper
- 3 medium carrots, sliced thin
- 10 medium sliced mushrooms
- 1 head cauliflower, cut in bite size
- 1/3 c. tomato juice
- 4 medium sliced thin zucchini
- grated cheese
- Place in preheated wok or frypan at 300u0b0.
- Saute garlic, onions and green pepper in oil until transparent.
- Add carrots and zucchini.
- Cook 3 minutes.
- Add cauliflowerr (broccoli may be used instead).
- Cook 3 minutes.
- Add tomato juice, mushrooms and seasoning and cook until tender.
- Turn into casserole dish.
- Cover with grated cheese and cover dish.
- Heat in 350u0b0 oven until heated through and cheese is melted.
- Serves 4.
