Mexican Layered Dip
- 3 medium avocados
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. sour cream
- 1/2 c. mayonnaise
- 1 (2 oz.) pkg. taco seasoning mix
- 1 large can refried beans
- 2 c. chopped tomatoes
- 1 c. chopped green onions (including tops)
- 16 oz. can chopped black olives
- 8 oz. shredded Monterey Jack cheese or Cheddar
- sliced jalapenos
- Mash avocados and mix with lemon juice, salt and pepper.
- Mix separately the sour cream, mayo and taco seasoning.
- In a 9 x 13-inch cake pan or 10-inch round serving dish, layer ingredients in the following order:
- avocado mixture, sour cream mixture, onions, tomatoes, olives and cheese.
- Top with jalapenos.
- Chill. Serve with tortilla chips.
