Beef Or Pork And Vegetable Stir-Fry
- 3/4 lb. lean beef or pork
- 1 tsp. vegetable oil
- 1/2 c. celery, sliced
- 1/2 c. onion, sliced
- 1 Tbsp. soy sauce
- 1 Tbsp. cornstarch
- 1/8 tsp. garlic powder
- 1/2 c. carrots, sliced
- dash of pepper
- 2 c. zucchini squash, cut in thin strips
- 1/4 c. water
- Trim

- Slice across the grain into thin strips about 1-inch wide and 3-inches long.
- (Partially frozen meat is easier to slice.) Heat oil in frypan.
- Add meat strips and stir-fry over high heat, turning pieces constantly, until no longer
- red
- (3 to 5 minutes).
- Reduce heat.
- Add carrots, celery, onions
- and seasonings.
- Cover and cook until carrots are slightly
- tender
- (3
- to
- 4 minutes).
- Mix cornstarch and water. Add slowly to beef mixture, stirring constantly.
- Cook until thickened.
- Serve over rice.
