Chicken Nachos
- 1 1/2 pkg. (8 oz.) cream cheese
- 1 Tbsp. minced jalapeno (optional)
- 3 Tbsp. chopped onion
- 2 to 3 cloves pressed garlic
- 1 1/2 to 2 tsp. chili powder
- 2 chicken breasts, cubed and cooked
- 3 c. shredded Monterey Jack cheese
- 1 pkg. pita bread, split
- 1 1/2 c. shredded Cheddar cheese
- salsa (optional)
- In medium bowl cream the cream cheese, jalapenos, onion, garlic and chili powder.
- Fold in chicken and 1 1/2 cups of Jack cheese. Season with salt and pepper.
- Spread mixture on insides of split pita bread.
- Put on baking sheets.
- Bake at 400u0b0 for 5 to 10 minutes, until very hot.
- Cover with remaining cheese (Jack and Cheddar).
- Continue baking until cheese is melted.
- Cut each pita half into 3 wedges.
- Serve with salsa (optional).
- Makes about 72 wedges.
