Greek Macaroni Squares(Pastitsio)
- 2 large onions, finely chopped
- 1/2 c. butter or margarine
- 2 1/2 lb. lean ground beef
- 2 (8 oz.) cans tomato sauce
- 1/2 tsp. cinnamon
- 2 tsp. salt
- 14 oz. elbow macaroni
- 1/2 lb. grated cheese (Romano, Parmesan or Kefalotiri)
- cinnamon
- custard sauce
- 2 cloves garlic, minced
- In a large frying pan, saute onions in butter until golden; add meat until browned.
- Add tomato sauce, cinnamon, salt and garlic; cover and simmer 1/2 hour or until thickened.
- Cook macaroni in salted water until barely tender (about 12 minutes); drain and rinse under cold water.
- Drain thoroughly.
- Butter a 9 x 13-inch pan.
- Alternate layers of macaroni, meat sauce and cheese. Dust with cinnamon.
- Pour custard sauce over macaroni.
