Green Tomato Pickles
- 2 qt. chopped green tomatoes
- 4 qt. chopped cabbage
- 12 sweet red peppers
- 12 medium onions
- 12 sweet green peppers
- 4 Tbsp. ground mustard
- 2 Tbsp. pickling spices
- 1 Tbsp. turmeric
- 3/4 c. salt
- 4 c. apple cider vinegar
- Wash vegetables; put through the coarse blade of a food chopper or chop well.
- Place in a large container, add salt and let stand overnight.
- The next morning, drain vegetables.
- Tie pickling spice in a bag.
- Combine sugar and vinegar and simmer for 2 minutes.
- Add spice bag and all remaining ingredients with sugar/vinegar mixture and simmer until well seasoned.
- Remove spice bag, pack vegetables while hot into sterilized jars and seal.
