Tamale Pie
- 1 lb. ground beef
- 2 medium onions, finely chopped
- 2 cloves garlic, minced
- 2 (8 oz.) cans tomato sauce
- 1 c. milk
- 2 eggs, lightly beaten
- 1 (10 1/2 oz.) can whole kernel corn, drained
- 1/2 c. pitted ripe olives, sliced
- 3/4 c. yellow corn meal
- 2 tsp. salt
- 1 Tbsp. (or more) chili powder
- Tabasco sauce to taste
- In 12-inch skillet, over moderate heat, cook beef, onions and garlic until meat loses its red color.
- Stir in tomato sauce, milk, eggs, corn, olives, cornmeal, salt, chili powder and Tabasco sauce.
- Turn into 2-quart oblong baking dish.
- Bake in preheated 350u0b0 oven until knife inserted in center comes out clean (45 minutes).
- Makes 6 servings.
