Bbq Meatloaf With Tangy Onion Topping
- For Meatloaf
- 500 g ground beef
- 500 g ground pork
- 1 onion, chopped fine
- 1 slice bread, torn up
- 1 egg, beaten
- 1/4 teaspoon black pepper, freshly ground
- 1/4 cup barbecue sauce
- 3 garlic cloves, pressed (or very finely chopped)
- For topping
- 1 onion, cut in half and sliced (so you end up with semi-circles of onion)
- 1/4 cup barbecue sauce
- 2 tablespoons brown sugar
- For the meat loaf, combine bread, egg, barbecue sauce, garlic, pepper and chopped onion. Crumble pork and beef over top and mix well with hands or wooden spoon.
- Place in a loaf pan and bake at 350F, 175C for an hour or until fully cooked. Let rest or sit for 5 minutes and drain off any fat.
- Meanwhile, cook the sliced onion in a little water on medium heat until lightly golden. Add more water if necessary to prevent sticking.
- Add barbecue sauce and sugar and mix well. Simmer on low heat until thick.
- Pour topping over cooked meatloaf or serve along side meatloaf.
