Home Ec. Refrigerator Cookies
- 3/4 c. butter or margarine
- 1 1/2 c. sugar
- 2 eggs
- 1 1/2 tsp. vanilla
- 3 c. sifted all-purpose flour
- 3/4 tsp. salt
- 3/4 tsp. soda
- 3/4 c. finely chopped pecans (optional)
- Cream butter and sugar until light and fluffy.
- Beat eggs. Add eggs and vanilla to sugar mixture.
- Sift flour, salt and soda onto wax paper.
- Add sifted dry ingredients gradually to the egg mixture and mix thoroughly.
- Add pecans if desired.
- Press dough together and shape into long rolls about 2 inches in diameter. Wrap in wax paper.
- Chill overnight until firm.
- Cut dough into thin, uniform slices about 1/8-inch thick.
- Place about 1 inch apart on ungreased baking sheet.
- Bake at 375u0b0 for 10 to 12 minutes or until lightly browned.
- Remove cookies from baking sheet with spatula.
- Cool on cake rack.
