One-Bowl Pumpkin Bread
- 4 cups all-purpose flour
- 3 cups sugar
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 1/2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon ginger
- pumpkin pie spice (optional)
- 1 1/2 teaspoons salt
- 4 large eggs
- 1 cup plain oil
- 15 ounces solid-pack pumpkin
- 2/3 cup water
- 1 cup chopped walnuts (or more) or 1 cup pecans (or more)
- 1 cup dark raisin
- 1 teaspoon vanilla (optional)
- Mix together the dry ingredients and spices.
- Add the eggs, oil and water.
- Stir in the walnuts (or pecans) and raisins. Add vanilla, if using.
- Put into two greased and floured 9x5 inch loaf pans and bake in a preheated 350 degree oven for 1 hour, checking after 50 or 55 minutes.
