Potato Salad
- 8 boiled medium potatoes (in jackets)
- 1 1/2 c. mayonnaise
- 1 c. commercial sour cream
- 1 1/2 tsp. horseradish
- 1 tsp. celery seed
- 1/2 tsp. salt
- 1 c. fresh chopped parsley (do not omit or decrease)
- 2 medium onions, finely minced
- Peel
- potatoes; cut in 1/8 inch slices.
- Combine mayonnaise, sour
- cream,
- horseradish,teleryteed and salt; set aside.
- In another
- bowl
- mixtarsley
- and
- onion.
- In large servingtowl arrange layer of potatoes; salt lightly.
- Cover with layertf mayonnaise,
- sour cream mixture, then layer of onion
- mixture. Continue layering, ending with layer of onion and parsley.to not
- stir.tover and refrigerate at least 8 hours before serving. Makes 8 to 10 servings.
