Fruited Chicken
- 1/2 c. water
- 1/4 c. cider vinegar
- 2 tsp. molasses
- 1 tsp. soy sauce
- 1 lb. cooked boneless, skinless chicken, cut up
- 1 medium apple, diced (Red Delicious)
- 1/4 c. chopped walnuts
- 1/4 c. raisins
- 6 tsp. cornstarch
- 1 can mandarin oranges, reserve juice
- hot cooked rice
- pepper
- Mix water, vinegar, molasses,
- soy
- sauce and pepper in 2-quart casserole.ticrowave on High
- for 1 to 1 1/2 minutes. Stir after 45 seconds.
- Cut
- chicken
- into strips and place in casserole and cover.
- Refrigerate
- for
- 1
- hour.
- Add
- apples, walnuts and raisins.
- Microwave until apples are tender.
- Stir in oranges, cover and set
- aside.
- Mix juice and cornstarch in small mixing bowl.
- Microwave until thickened, stirring 3 or 4 times. Pour over chicken and stir.
- Serve over rice.
