Zucchini Bread(Low Cholesterol)
- 3 c. all-purpose flour (2 tsp. for dusting pans)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1/4 tsp. allspice
- 6 egg whites or 3/4 c. egg substitute
- 1 1/2 c. sugar
- 3/4 c. vegetable oil
- 1 1/2 tsp. vanilla
- 2 c. lightly packed zucchini, grated
- 1 c. raisins
- vegetable cooking spray
- Mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice.
- In a separate bowl, beat egg whites or egg substitute with sugar, oil and vanilla.
- Stir in zucchini and raisins.
- By hand, stir in flour mixture just until flour is blended.
- Spray 2 (4 x 8-inch) loaf pans with vegetable cooking spray and dust with 2 teaspoons flour.
- Divide batter into pans.
- Bake at 350u0b0 for 50 to 60 minutes.
- Makes 2 loaves or 32 (1-slice) servings.
