Zucchini Bread(Low Cholesterol)

  1. Mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice.
  2. In a separate bowl, beat egg whites or egg substitute with sugar, oil and vanilla.
  3. Stir in zucchini and raisins.
  4. By hand, stir in flour mixture just until flour is blended.
  5. Spray 2 (4 x 8-inch) loaf pans with vegetable cooking spray and dust with 2 teaspoons flour.
  6. Divide batter into pans.
  7. Bake at 350u0b0 for 50 to 60 minutes.
  8. Makes 2 loaves or 32 (1-slice) servings.
