Waldorf Sweet Potato Salad
- 1/3 cup walnuts
- 3 cups sweet potatoes, peeled and grated
- 1 red apple, chopped (unpeeled, cored and coarsely chopped)
- 1/2 cup celery, chopped
- 1/2 cup red seedless grapes, halved
- 1/3 cup blue cheese, crumbled (optional)
- Dressing
- 3 tablespoons apple juice
- 2 tablespoons vegetable oil
- 1 tablespoon white wine vinegar
- 1 teaspoon white wine vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- Toast walnuts in oven at 350 degrees until golden, about 10 minutes. Cool. Place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl.
- To make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. Pour over salad and toss well. Serve on a platter lined with red leaf lettuce.
