Lasagna Roll-Up
- 8 curly edged lasagna
- 1 (10 oz.) pkg. chopped spinach, thawed
- 1 1/2 c. Ricotta cheese
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 1 egg, beaten
- 1/4 c. grated Parmesan cheese
- 8 slices ham (1 oz. each)
- 1 (15 oz.) jar spaghetti sauce
- Cook lasagna in salted, boiling water until just tender. Drain.
- Place in cold water.
- Drain spinach well and mix with Ricotta cheese, salt, pepper, nutmeg, egg and Parmesan cheese. Drain noodles and pat dry with paper towels.
- Cut ham slices in half, lengthwise.
- Place on noodles.
- Spread each with spinach mix. Roll up noodles and place on sides in 9x13 inch baking dish.
- Pour spaghetti sauce over lasagna and bake at 350u0b0 for 35 to 40 minutes, or until done.
- Serve 10.
