Healthy Spinach Roll-Ups
- 8 uncooked lasagna noodles
- 4 slightly beaten egg whites
- 2 c. low-fat cottage cheese, drained
- 1/4 c. grated Parmesan cheese
- 1 tsp. basil (optional)
- 16 oz. tomato sauce
- 20 oz. frozen chopped spinach, thawed
- 2 c. shredded part skim Mozzarella cheese (8 oz.)
- 1 tsp. oregano
- dash of garlic powder
- In saucepan cook noodles according to package directions. Drain.
- Thoroughly drain spinach, pressing out excess liquid. Combine egg whites, spinach, cottage cheese, 1 cup Mozzarella cheese, Parmesan cheese, oregano, basil and garlic powder.
- Spread one-eighth of mix on each noodle.
- Loosely roll up jelly roll style, starting with short edge.
- Place, seam side down, in casserole dish.
- Pour tomato sauce over rolls.
- Cook in a 350u0b0 oven for 30 to 40 minutes.
- Sprinkle with remaining Mozzarella cheese. Cover and let stand 5 minutes before serving.
