Healthy Spinach Roll-Ups

  1. In saucepan cook noodles according to package directions. Drain.
  2. Thoroughly drain spinach, pressing out excess liquid. Combine egg whites, spinach, cottage cheese, 1 cup Mozzarella cheese, Parmesan cheese, oregano, basil and garlic powder.
  3. Spread one-eighth of mix on each noodle.
  4. Loosely roll up jelly roll style, starting with short edge.
  5. Place, seam side down, in casserole dish.
  6. Pour tomato sauce over rolls.
  7. Cook in a 350u0b0 oven for 30 to 40 minutes.
  8. Sprinkle with remaining Mozzarella cheese. Cover and let stand 5 minutes before serving.
