Rabbit Fricassee
- 1 rabbit, dressed
- 1 c. vinegar
- salt
- 1 1/2 tsp. monosodium glutamate
- 1 1/2 tsp. pepper
- 1/2 tsp. saffron
- 1/4 tsp. oregano
- bacon drippings
- 1 onion, chopped
- 1/2 tsp. garlic powder
- Cut up rabbit into serving size pieces.
- Soak in a solution of 1/4 cup vinegar and 1 teaspoon salt and enough water to cover the rabbit for 3 hours.
- Drain and dry.
- Sprinkle pieces with monosodium glutamate.
- Cover and allow to stand in the refrigerator overnight.
- Mix 2 teaspoons salt and pepper, saffron and oregano.
- Rub into the meat.
- Fry rabbit slowly in 1-inch of bacon drippings until browned on all sides.
- Place onion in a casserole followed by rabbit.
- Pour 1 tablespoon vinegar in 1/2 cup water over the rabbit.
- Cover tightly and bake at 275u0b0 for 2 hours.
