Rabbit Fricassee

  1. Cut up rabbit into serving size pieces.
  2. Soak in a solution of 1/4 cup vinegar and 1 teaspoon salt and enough water to cover the rabbit for 3 hours.
  3. Drain and dry.
  4. Sprinkle pieces with monosodium glutamate.
  5. Cover and allow to stand in the refrigerator overnight.
  6. Mix 2 teaspoons salt and pepper, saffron and oregano.
  7. Rub into the meat.
  8. Fry rabbit slowly in 1-inch of bacon drippings until browned on all sides.
  9. Place onion in a casserole followed by rabbit.
  10. Pour 1 tablespoon vinegar in 1/2 cup water over the rabbit.
  11. Cover tightly and bake at 275u0b0 for 2 hours.
