Dalamanky Rolls Czech
- 3/4 cup rye flour
- 3/4 cup wheat flour
- 1 1/4 cups white flour
- 1 tablespoon gluten
- 2 tablespoons sugar
- 3 teaspoons yeast
- 1/4 teaspoon pepper
- 2 teaspoons salt
- 1 tablespoon caraway seed, ground
- 3 tablespoons oil
- 3/4 cup water, warm
- topping
- 1 tablespoon salt, coarse
- 1 tablespoon caraway seed
- mix yeast sugar and water
- let proof
- add spices oil and then flours gluten knead until smooth let rise until double punch down
- divide into 5 round rolls
- cut a cross into them
- let rise covered until doubles
- sprinkle with water
- sprinkle with topping
- preheat oven to 400 degrees put a bowl of water in baking dish
- bake for 20 minutes until bread is lightly browned.
