Chicken Noodle Dish(To Freeze)
- 1/2 c. butter
- 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. dried leaf basil
- 3 1/4 c. chicken broth
- 4 oz. Mozzarella cheese, thinly sliced
- grated Parmesan cheese
- 5 c. diced, cooked chicken
- 2 c. creamed cottage cheese (1 lb.)
- 1 egg, slightly beaten
- 8 oz. pkg. broad egg noodles, cooked and drained
- 1 (10 oz.) pkg. frozen chopped broccoli, thawed
- Melt butter in large saucepan.
- Blend in flour, salt and basil.
- Stir in chicken broth and cook, stirring constantly, until mixture thickens and comes to a boil.
- Remove from heat.
- Add chicken.
- Mix cottage cheese with egg.
- Line a 3-quart casserole with heavy-duty foil.
- Lightly grease foil.
- Place 1/3 of chicken mixture on bottom of casseroles.
- Top with half of noodles, half of cottage cheese mix, half broccoli and Mozzarella cheese and repeat layers.
- End with last third of chicken mixture and sprinkle with Parmesan cheese.
- Tightly cover with foil and freeze.
- To cook, place still frozen in a 350u0b0 oven and bake 2 hours.
- Serves 8.
