Fruit Cake Bread
- 2 3/4 c. all-purpose flour
- 2 c. sugar
- 1 c. oil
- 3 eggs, slightly beaten
- 1 (8 oz.) can crushed pineapple, juice and all
- 2 medium ripe bananas, mashed
- 1 c. coarsely chopped pecans
- 1 (8 oz.) jar maraschino cherries, drained and cut into quarters
- 1 (3 1/2 oz.) can Angel Flake coconut
- 1 tsp. vanilla
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. salt
- Sift all dry ingredients into a large mixing bowl.
- Add everything else and stir until well mixed.
- Do not beat.
- Pour into
- a
- greased
- and floured tube or Bundt pan.
- Bake in preheated
- oven
- at 325u0b0 for 1 1/2 hours.
- Cool for 1 hour in pan on
- a wire rack.
- Turn right side up on the wire rack and cool again for 1 hour.
