Beef In Beer
- 1 1/2 lb. stew beef (1-inch cubes)
- 8 oz. diced bacon
- 2 large sliced onions
- 1 or 2 chopped leeks (including some of the green part)
- 1 pt. beer
- flour, salt, pepper and mixed salad herbs
- 1 lb. chopped carrots
- chopped parsley (optional)
- Fry bacon pieces in large pan.
- Leave bacon in pan.
- Add beef and brown in bacon drippings.
- Add onion and leeks and lightly brown.
- Stir in a little flour.
- Add beer, stirring constantly. If necessary, add water to cover meat.
- Season with salt, pepper and mixed salad herbs.
- Add carrots and bring to a boil.
- Simmer gently for 2 1/2 hours or until beef is tender.
- (Can be cooked in a moderate oven, 350u0b0, in covered dish for 2 1/2 hours.)
- Serve with mashed potatoes or noodles.
- Sprinkle with chopped parsley (optional).
