Pork Fried Rice
- 2 c. pork meat, finely diced
- 2 medium onions, finely diced
- 2 tsp. garlic cloves
- 3 Tbsp. cooking oil
- 4 c. cooked rice
- 3 eggs, beaten (optional)
- 3 tsp. soy sauce
- 3/4 c. chopped green onion (all of it)
- salt and pepper to taste
- Heat wok or skillet.
- Add oil; fry half of the onion and garlic until garlic turns slightly brown.
- Add pork; cook until done or 5 minutes, then add rice to the meat.
- Stir thoroughly until mixed and heated through.
- Push rice to side of the wok or skillet.
- Pour in egg mixture.
- Add salt and pepper in the center (if desired).
- Scramble eggs until set; mix with rice and sprinkle soy sauce over the rice.
- Raise heat for 1 minute; remove.
- Add rest of the onion; mix thoroughly.
- Serve hot.
