Sweet And Sour Pork Chops
- 4 thick loin chops
- 2 Tbsp. vegetable oil
- 1 large yellow onion, sliced
- 1 clove garlic, minced
- 1 rounded tsp. cornstarch
- 1 c. pineapple juice
- 1 tsp. brown sugar
- 1/4 tsp. curry powder
- 1/4 tsp. pepper
- 1 Tbsp. soy sauce
- 2 Tbsp. white vinegar
- 3 strips lemon peel
- 3 Tbsp. tomato sauce
- 1/3 c. almonds, finely chopped
- Brown chops in oil; transfer to baking dish.
- Discard all but 2 tablespoons of oil and meat drippings.
- Lightly saute onion and garlic.
- Sprinkle cornstarch over this.
- Add everything else but almonds.
- Simmer, covered, for 5 minutes.
- Pour mixture over chops.
- Bake, covered, at 350u0b0 for 1/2 hour.
- Sprinkle almonds on top.
- Bake, covered, another 1/2 hour.
