Cape Cod Cranberry Meat Loaf

  1. Preheat oven to 350u0b0.
  2. Combine cranberry sauce and brown sugar in the bottom of a 9 x 5 x 3-inch loaf pan.
  3. Combine remaining ingredients, except for the bay leaves, and mix well.
  4. Shape into a loaf and place over sauce.
  5. Top with bay leaves and bake 1 1/4 hours.
  6. Remove bay leaves before removing to a warmed platter. Drizzle pan juices, especially the cranberries, over the loaf before serving.
  7. Serves 4 to 6 generously.
