Special Coffee Spice Cake
- 1/2 c. shortening
- 1/2 c. sugar
- 2 eggs
- 1 c. molasses
- 2 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. cloves
- 1 c. Millstone Bed and Breakfast gourmet coffee, brewed and double strength
- Mocha Whipped Cream
- Heat oven to 350u0b0. Grease and flour a 13 x 9-inch pan. Combine shortening and sugar. Beat until well blended. Beat in eggs and molasses.
- Mix well. Combine flour, baking powder, cinnamon, ginger, salt, baking soda and cloves.
- Add to shortening mixture alternately with coffee. Pour into prepared pan.
- Bake for 40 to 50 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan and cool on wire rack.
- Serve with Mocha Whipped Cream.
- Makes 12 servings.
