Meatless Lasagna
- 1/2 (1 lb.) pkg. lasagna, uncooked
- 3 Tbsp. margarine or butter
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1 (28 oz.) can tomatoes, cut up and undrained
- 1 (6 oz.) can tomato paste
- 1/2 c. water
- 2 c. (1/2 lb.) shredded Cheddar or Colby cheese
- 2 c. (1/2 lb.) shredded Mozzarella cheese
- 1/2 Tbsp. basil leaves
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 (16 oz.) can mixed vegetables, drained
- Prepare lasagna according to package directions; drain.
- In large saucepan, melt margarine.
- Add onion and celery; cook until tender.
- Stir in tomatoes, tomato paste, water, basil, sugar, salt and pepper.
- Bring to a boil.
- Reduce heat; simmer 15 minutes.
