Sausage Soup
- 1 lb. Italian sausage
- 1 1/2 c. chopped onion
- 1 clove garlic
- 1 1/2 c. chopped celery
- 1 (28 oz.) can stewed tomatoes
- 1 (10 1/2 oz.) can tomato puree
- 6 c. chicken broth
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/2 c. chopped fresh parsley
- 1 1/2 Tbsp. sugar
- 1/4 tsp. thyme
- 3 or more handfuls egg noodles
- 1 can red beans, rinsed
- Brown sausage in soup pot; remove and set aside.
- Saute onion, celery and garlic in a little of the fat from sausage until vegetables become soft.
- Add all the other ingredients except noodles and beans (including sausage) and simmer 30 minutes.
- Add noodles and beans.
- Cook until noodles are soft, 8 to 10 minutes. Serve with a loaf of French bread.
