Peanut Butter-Banana Pudding
- 1 c. sugar
- 3 Tbsp. all-purpose flour
- 1/8 tsp. salt
- 2 large eggs, lightly beaten
- 3 c. milk
- 1 tsp. vanilla extract
- 1/2 c. creamy peanut butter
- 1 (12 oz.) pkg. vanilla wafers
- 6 medium bananas, sliced
- 1 (8 oz.) container frozen whipped topping, thawed
- 1/2 c. unsalted roasted peanuts, chopped
- Combine first three ingredients in a heavy saucepan.
- Add eggs and milk, mixing well.
- Cook over low heat, stirring constantly, 25 minutes or until thickened.
- Remove from heat and stir in vanilla.
- Spread about 1/2 teaspoon of peanut butter between 2 vanilla wafers, forming a sandwich.
- Repeat procedure with remaining peanut butter and vanilla wafers.
