Louise'S Oatmeal Cookies
- 1 c. raisins
- 3/4 c. water
- 1 c. shortening
- 2 c. brown sugar
- 2 eggs
- 2 c. oatmeal
- 3 1/2 c. flour (dough must be stiff)
- 1 tsp. soda
- 1 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. cloves
- 1/2 tsp. allspice
- 1/2 c. nuts
- Boil raisins in water; drain raisins, saving 1/3 cup juice. Cream shortening; add sugar and cream again.
- Add beaten eggs. Stir in oats.
- Sift flour with spices, baking soda, baking powder and salt.
- Add alternately with 1/3 cup raisin water.
- Add nuts and raisins.
- Spoon onto cookie sheet with tablespoon or roll into balls by hand.
- Bake for 20 minutes or until lightly brown at 350u0b0. Do not overbake or the cookies will be hard.
